Quick and Delicious One-Pot Chicken & Basmati Rice Recipe

After a long day, the last thing you want to think about is what to cook for dinner, right? I hear ya!

 

My mother-in-law shared a recipe with me for One-Pot Chicken and Basmati Rice with Spinach. She said it was delicious and easy to make.

 

After a long day (with a teething baby), I needed a recipe like this! 30 minutes later, I had dinner on the table! And only one dirty pan - bonus!

 

And wow - it was delicious! Definitely a recipe I'll be adding to my recipe box!

One-Pot Chicken & Basmati Rice with Spinach

2 tbsp butter

1 chopped onion

2 cloves minced garlic,

            OR ½ tsp garlic powder

3 - 4 BirdHouse Farm chicken breasts,

cut into bite size pieces

2 tsp minced fresh ginger,

OR ½ tsp ground ginger

2 tsp curry powder

¾ cup basmati rice

2 cups 5% or 10% cream

1 cup water

4 cups lightly packed chopped spinach

Salt to taste

 

In a large deep pot, melt butter over medium heat. Add onion and garlic. Sauté for 3 minutes or until onions are softened.

 

Add chicken, ginger and curry powder and cook, stirring often, for 3 minutes or until chicken is lightly browned.

 

Add rice and stir to coat. Add cream and water. Increase heat to medium-high heat and bring to a boil, stirring occasionally. Stir in spinach.

 

Cover and reduce heat to low. Simmer for about 10 minutes or until rice is tender and chicken is no longer pink inside. Season with salt.

 

Remove from heat and let stand for 5 minutes before serving.
